Greek Quinoa Salad

Ingredients
- 3/4cup quinoa
- 4small cucumber, large diced
- 1 1/2cups grape tomatoes, halved
- 1 yellow pepper, diced
- 1 green pepper, diced
- 3/4cup crumbled feta
- Salt and pepper to taste
- Dressing:
- 1/3cup olive oil
- 3tablespoons red wine vinegar
- 1sprig oregano, chopped
- Salt and pepper to taste
Instructions
- Soak quinoa in water for 5 minutes. Drain and rinse. Add quinoa with 1 1/4 cup water and 1/4 teaspoon salt to a small saucepan cover and bring to a boil, reduce heat and simmer for 15 minutes. Let rest for 5 minutes. Fluff with a fork and let cool.
- Add all dressing ingredients to jar and shake.
- Mix quinoa with the vegetables and add crumbled feta, salt and pepper to taste. Add salt sparingly as feta is salty. Pour dressing over the salad and toss.
- Refrigerate for 1 to 2 hours and serve.
