Greek Quinoa Salad

Ingredients

3/4cup quinoa
4small cucumber, large diced
1 1/2cups grape tomatoes, halved
1 yellow pepper, diced
1 green pepper, diced
3/4cup crumbled feta
Salt and pepper to taste
Dressing:
1/3cup olive oil
3tablespoons red wine vinegar
1sprig oregano, chopped
Salt and pepper to taste

Instructions

  1. Soak quinoa in water for 5 minutes. Drain and rinse. Add quinoa with 1 1/4 cup water and 1/4 teaspoon salt to a small saucepan cover and bring to a boil, reduce heat and simmer for 15 minutes. Let rest for 5 minutes. Fluff with a fork and let cool.
  2. Add all dressing ingredients to jar and shake.
  3. Mix quinoa with the vegetables and add crumbled feta, salt and pepper to taste. Add salt sparingly as feta is salty. Pour dressing over the salad and toss.
  4. Refrigerate for 1 to 2 hours and serve.
