Apple Pie Bars
- Yield: 3 to 4 dozen pieces
Ingredients
- 2-1/2cup flour
- 2tablespoons sugar
- 1/4thteaspoon salt
- 2 egg yolks
- 1cup shortening
- 1/3cup milk
- 1cup crisp rice cereal
- 8cups slices, peeled tart apples(about 9nine medium
- 1cup sugar
- 1teaspoon flour
- 1/2teaspoon cinnamon
- 2 egg whites, slightly beaten
- 1cup confectioners sugar
- 1 to 2tablespoons milk
Instructions
Crust:
- Mix flour, sugar and salt; cut in shortening until crumbly. Mix egg yolks and milk and add to crumb mixture. Toss with fork until dough forms a ball. Divide in half. Roll each portion into a 15″ x 10″ rectangle. Line a 15″x 10″x1″ pan with one rectangle.
Filling:
- Sprinkle the rectangle with cereal, arrange apple over cereal. Combine sugar, flour and cinnamon over apples. Top with remaining pastry. Brush with egg whites and cut slits in top crust. Bake at 350 degrees for 50-55 minutes or until golden brown. Cool.
Glaze:
- When cool – drizzle with the sugar and milk mixture. Store in refrigerator
Note: Recipe doesn’t say, but I always use a baking spray on the pan.
